Stuffed Peppers
Rachael’s stuffed peppers are fantastic! Though apparently this is a simplified version of her mom’s recipe which is even more delicious. Pretty fast dish, great for times when you find peppers on sale.
Ingredients:
- Raw peppers (4-5): Red, orange, and yellow are best (green peppers aren’t as tasty)
- 1 cup white minute rice
- 1 pound hamburger
- 1 large can tomato sauce (29 oz)
- 1 small can diced tomatoes (14.5 oz)
- Salt / pepper / other seasonings to taste
- Shredded cheese (optional)
Directions:
- Preheat oven to 350 degrees
- Brown hamburger, drain
- Cook white rice
- Clean peppers, cut in half long way
- Grease baking dish(es)
- Mix rice and hamburger together
- Mix in enough tomato sauce to coat rice and beef mixture
- Mix in 1/4 can of diced tomatoes
- Place halved peppers in baking dish(es)
- Stuff halved peppers with rice/hamburger/tomato mixture
- Cover peppers with remainder of tomato sauce and diced tomatoes
- Bake in oven at 350 degrees for 30-40 minutes or until peppers are cooked to desired crunchiness
- Top with cheese before or after baking (if desired)

This was a really good recipe. I used ancient sweet peppers instead of bell. To the meat I added some chopped pepper and red onions. I used real rice
instead of minute rice. This dish had a lot of flavor; although, we did have to use a little hot sauce to spice things up a bit.
